En 1725 pasaron muchísimas cosas. Por ejemplo, el 30 de abril, Felipe V y Carlos VI, el rey de España y el emperador del Sacro Imperio, firmaron la paz en el Tratado de Viena. No está muy claro qué música estaba sonando mientras ellos grabateaban los documentos, pero seguro que no era ni Mozart ni Beethoven porque ninguno de los dos había nacido todavía. Este año, Jonathan Swift estaría terminando «Los Viajes de Gulliver» en su apartamento de Dublin y por otro lado, en Virginia, Mary Bell y Augustine Washington ya tendrían decidido cómo llamar a su hijo. Lo que aún no sabían ellos es que su pequeño George sería el primer Presidente de los Estados Unidos de América. Ese mismo año, en Francia, ya se daban los primeros signos de algo que, siglos más tarde, se conoció como «Revolución francesa», aunque todavía tardaría en llegar 64 años. Una revolución que Isaac Newton no llegaría a ver, ya que murió en el ‘27, un par de años después. Menos mal que el físico lo dejó todo escrito, si no no entenderíamos demasiadas cosas.

Mientras todo esto sucedía en 1725, en Jijona, un señor llamado Lorenzo Sirvent Ibáñez, decidió dejar sus aperos de labranza a un lado y se dedicó a lo que realmente le gustaba: hacer turrón. Y luego le enseñó a su hijo. Y su hijo a su hijo. Y su hijo a su hijo. Y su hijo a su hijo. Así hasta que el tataranieto de Lorenzo abrió un pequeño obrador de turrón independiente en Argentina, ya que había muchas dificultades para transportar el producto a mercados internacionales desde España. El obrador permaneció un tiempo al lado de Mercados «El Lobo», su principal cliente y con el que empezó a colaborar hasta que heredó el nombre del negocio de su amigo. Aquel señor que vivió en 1725, Lorenzo Sirvent Ibáñez, fue el fundador de una compañía que ha llegado hasta el siglo XXI. Muy pronto cumpliremos 300 años. Guau. Tres siglos.

Quién sabe. Quizá Felipe V, Carlos VI, Mozart, Beethoven, Swift, Washington o Newton llegaron a probar nuestro turrón de Jijona. De hecho, es realmente posible que alguna persona de su entorno les ofreciera un pedazo de El Lobo. Sobre todo en Navidad. Y aunque eso no lo podamos asegurar del todo, lo que sí podemos garantizar es que la receta de aquellos dulces sigue siendo la misma que entonces, heredada a través de 11 generaciones. Almendra y miel. Qué fácil parece. Y qué difícil es.
