En Juillet et en Août, tous les jeudi après-midi, une visite du chai vous est proposée (possible également les autres jours pour des groupes et sur rendez-vous).
Située dans le Vallon de Marcillac en Aveyron, la Cave de Valady « Les Vignerons du Vallon » regroupe une quarantaine de producteurs et commercialise 55% de la production de l’appellation Marcillac.
Les vendanges de notre AOC sont exclusivement manuelles. Les sols de type rougier et argilo-calcaires, l’altitude moyenne des vignes (400m), et la situation au carrefour de trois zones climatiques (continental, océanique et méditerranéen), créent un terroir unique qui permet au Mansois, cépage local unique au monde, de développer des arômes enchanteurs.
Au cœur de ce vignoble d’exception, nous élaborons une gamme de vins rouges et rosés ainsi qu'un apéritif local appelé Ratafia et un vin de Noix.
Un vin cultivé et préparé dans le respect de la tradition, porteur de valeurs simples, de préservation de l’environnement et des pratiques saines. Depuis les années 60, nos producteurs se sont alliés pour partager leur savoir-faire et créer ensemble des vins traditionnels ancrés dans leur époque.
En 1990, leurs pratiques sont reconnues et rassemblées sous un label de qualité, l’AOC Marcillac, cher à notre territoire.

In July and August, every Thursday afternoon, a visit of the wine cellar is organized (which is also possible other days for groups and upon advanced notice).
Situated in the Marcillac valley in the Aveyron department, the Valady Cellar "The Vinterns of the Valley" brings together about 40 producers and markets 55% of the production of the Marcillac appellation.
The harvest of the AOC is exclusively manual. The red argillite and clay limestone soil, the average altitude of the vines (400m), and the situation at the crossroads of three climatic zones (continental, oceanic, and Mediterranean, create a unique terroir which allows the Mansois variety, unique to this area, to develop enchanting aromas.
In the heart of this exceptional wine region, we develop a range of red and rosé wines as well as a local liqueur called Ratafia and a Walnut Wine.
A wine, cultivated and prepared with respect to tradition, the bearer of simple values, environmental conservation and wholesome practicdes. Since the 1960s, our producers have united to share their knowledge and together create traditional wines anchored in their period.
In 1990, their practices were recognized and brought together under the designation AOC Marcillac, prized by our territory.
