"Have trailer, will cater." Given that they're mobile, be on the lookout for them to to pop up elsewhere, so do your research before visiting. At present, they're parked in front of an old truck stop on the west side of FM 1658, just south of US 380. A photo of their menu is in the gallery, but they offer brisket, sausage, and hot links by the plate -- check with them for availability of ribs -- and the same meats are available as sandwiches or in burritos. You have your choice of sides in the form of potato salad, cole slaw, BBQ beans, pinto beans, red beans and rice, and chips, and to drink they have canned/bottle drinks and iced tea. Plan to take your food with you, as there is no seating here.
