Closing times are approximate, as it often happens in Texas that the best places run out early, so for those who haven't yet learned: Arrive early for the best selection.

There's a board near the ordering window, listing your options: Sliced/chopped brisket, sausage (regular and jalapeño cheese), ribs (pork and beef), pulled pork, turkey, and pork belly burnt ends. They also have a few sandwich options, as well as a "Prison Platter" for $25 that will give you 2.5 pounds of five meats and a couple of sides. There are a few homemade sides, $3 each if you're going on the cheap, and they'll garnish your selection with homemade pickles and pickled onions. They can do hot dogs for the kids, but let's not let them practice bad habits at a barbecue joint. They have a cooler full of canned soft drinks, and you're welcome to BYOB. If you plan to have room for dessert, they also have a good selection of pies, puddings, and cookies. Give them just a couple of minutes to put everything together for you -- service is beyond friendly, these guys are great! -- and they'll wrap things up for you to go if need be. They'll provide you with sauce, which is really good, but you're really not going to need it unless you're getting pulled pork or you're a sauce fanatic.

There are a few places to sit, pretty well-shaded, but for the best experience, sit at one of the tables by the smokers. Great place to take in the aroma that is barbecue, watch the trains (including Amtrak) go by, and keep an eye on downtown Ponder. Be on the lookout for the Ponder State Bank, which was used in the 1967 film, "Bonnie and Clyde", when Clyde tries to rob it and finds that it had gone bust weeks before. There are occasional events here, too, so follow them on Facebook for more information.

While they are indeed closed on Monday, Tuesday, and Wednesday, check their Facebook page to see if they're offering any specials on one of those off days. Sometimes they'll move excess product and give you a heck of a deal, all cooked up fresh.
