Pubs often use prominent local people for their pub names and use coats of arms for the pub sign.
In this case the Mowbray family were important in the early history of Thirsk.
After the Norman Conquest of 1066 the lands around were held by Robert de Mowbray who gave his name to this district. William Mowbray (c.?1173–c.?1224) who still lived in the area was one of the twenty-five executors of Magna Carta. However the arms displayed appear to be , who was no longer connected with the area around Thirsk, but was a direct descendant of the original Thirsk branch of the family.
Although the arms appear to show 3 lions, in heraldic terms they are in fact Leopards.
