Going beyond the tahonas, the mills take advantage of the force of the wind that, through the blades and a series of gears, turns the stone that grinds the grains. They are circular in plan and have two floors with a conical roof. The mill has two large stones, very hard and round, with a central hole. The upper one receives the force of the wind making it rotate on another that remains static. Both are separated by a few millimeters. The cereal grains are introduced into the tuff, a container similar to a funnel through which the grain falls through the hole in the center of the stone, and as it deposits between the stones it becomes gofio.
