Saint Denis is the patron saint of the City of Paris...and is often depicted carrying his own head.

Saint Denis' birth year is unknown and the date of his death was either 250, 258 or 270. He was a martyr under the persecution of Christians by Roman Emperor Trajan Decius. The legend is that after his head was chopped off, he picked up his head and continued to walk and sermonize for ten kilometers. Italian by birth, he was sent to Gaul to Christianize the Parisians. This statue of Denis is located at the entrance to the Notre Dame Cathedral. It does depict him carrying his head and wearing a mitre. He has a staff nestled in his left arm as well. There are two angels on either side of him..one male and one female. A regal figure is to Denis' right after the angel.
There is another statue of Denis inside the cathedral..that one has his head intact.
