This is a great Mexican restaurant in the college town of Oklahoma State University.

If you've ever heard of Stillwater, you've heard of Eskimo Joe's an iconic burger and chicken restaurant......well, this is MEXICO Joe's. On a recent trip to Stillwater, we saw the sign and thought - we've got to eat there. And so we did!
As you might imagine, in a college town, there is no lack of restaurants and places of entertainment. Mexico Joe's is a fun place, with the usual Mexican decor, and colored "Christmas" lights hanging from the ceiling. But, the proof is in the pudding - or in the taco! So we ordered what we normally order in a Mexican restaurant, and were pleasantly surprised at how great it was. Probably the best taco salad I've ever had. The waitstaff was super friendly, and attentive. Definitely a place to return to......and we did, the very next weekend.
